The HACCP - Plan Implementation and Records Management video was developed by Ohio State University through a cooperative agreement with FSIS. The video and accompanying manual provide examples of critical control points (CCPs), how to do process verification and pre-shipment reviews and how to manage the records that will be generated from CCPs.
